HOMEBREW Cowboy coffee? BREW, STEEP, OR WHOLE BEAN? T fresh brewed, or cold steeped, remember: it will eventuallyhere are several ways to get coffee into your beer, somebetter than others. Whether whole bean, ground, crushed, go into the beer, so keep everything clean and sanitized. DRIP • Probably the least desirable method, but you can use the Mr. Coffee machine that’s sitting on the kitchen counter. Simple and straightforward, but it may be better suited for very mild coffees so as not to extract too many bitter or vegetal flavors. Also, make sure that your old coffee maker is very clean. STEEPING • Steep fresh-ground coffee or coarsely cracked beans at the end of the boil. Avoid boiling the coffee, as this extracts unwanted bitterness and drives off aroma. COLD STEEPING • Cold brewing, or steeping coffee the night before, helps avoid extracting acidic flavors from the beans and adds a smooth flavor to the beer. For a five-gallon batch, add a half-pound of ground coffee in a mesh bag to 24 ounces of cold, filtered water in a sanitized container. Allow this to sit in the refrigerator for 24 hours, remove the bag and add the coffee to the beer. 36:
